The Sun is not the center of the planets' orbits, but it is one focus of their orbital ellipses.

So, figuring out the parameters of the ellipses describing the movement of heavenly bodies, but not questioning whether ellipses are a good choice to begin with.

They are moving in 3 dimensions and when they are projected down to 2-dimensional space they become ellipses.
