My memory says that Choi claimed N^6 in theory, but could be reduced to N^3 in practice.

The essay seems to exclude immigrant foods (fresh bok choi for Chinese dishes), regional foods (like Southern dishes with collard greens), etc.

I really don't understand the attention Choi is getting with this.

I think Roy Choi is great, and is most the reason for the Korean explosion in food trucks, however he only seems to have 2 real competitors at the locations I frequent.
