vanillin

A natural vanillin molecule is indistinguishable from fully synthetic vanillin from crude oil.

It's very likely that the natural flavors include other things unrelated to cinnamon, like vanillin or eugenol (cloves, carnation).

Vanilla bean!= Vanillin, since the smell of natural vanilla bean has a many more components to it other than Vanillin which lend it that characteristic odor (sweet, animalic, slightly woody and herbaceous).

Benzaldehyde has an almond-like scent, vanillin smells like vanilla, ethylbenzene is sweet and plastic-y, and 2-ethyl hexanol is lightly floral.

It's not directly nice, like vanillin, but it's not bad, like pyridine or butyric acid.

Coumarin has more of a herbaceous, 'hay' smell, quite different from vanillin itself.

Maybe vanillin, the essence of vanilla, but not quite the same thing?

When considering exports, vanillin probably doesn't count since it is not vanilla.

Lignin, the stuff that prevents all trees from adopting the weeping habit, is a polymer made up of units that are closely related to vanillin.

I have also experimented with adding vanillin, which I believe commercial Coca-Cola contains, but which is curiously absent from the OpenCola recipe.

If it's cheaper, this could easily be a vanilla/vanillin situation.

I looked at the product sheet ov vanilla coke in France, where it is a legal obligation to list how much of the ingredients mentioned on the packaging are present, and vanilla isn't mentioned at all, only "vanilla flavor" (most likely artificial vanillin).

(example: vanillin) There are some scent molecules that are totally new and not found in nature outside of our production, but "naturally occurring" is a broad category that can include all sort of things individuals are likely to be sensitive to even after removing all the "natural" chemicals that are actual poison.

Vanillin, benzaldehyde, and 2-ethylhexanol are all found in edible plants, and in particular, those three smell very good.

Vanillin by itself is of course a principle component.
