You wouldn't use spaghetti for a meat sauce but a bit more chunky kind of pasta like tagliatelle or papardelle.

Not every Italian eats Tagliatelle and joins the Mafia but it's still an Italian recipe.

I would go with rotini or radiatore if I really needed the surface area otherwise a ribbon pasta like fettucine or tagliatelle, almost every time.

I mean, it's one thing when one starts adding cream to carbonara (or make it with just cream, like they do in the UK) but swapping spaghetti for tagliatelle is hardly a crime.

The main reason for tagliatelle/pappardelle is to get "fresh" pasta.

It's also difficult to use ("cook") right and it's perishable, so probably the taste of white truffle here in Italy on top of handmade fresh tagliatelle...

You can't substitute a cup of dried tagliatelle (huge "balls of yarn") for a cup of risoni (rice-sized grains of pasta) and be happy after eating that meal.

- "Pasta Fresca" (tagliatelle, raviolis, tortellinis, etc) is often served with butter-based sauces (like a lot of the traditional northern cuisine).

Sometimes also Greek Khritaraki (resembling rice) and Trofie Liguri, and of course ready-made Gnocchi, Tagliatelle, and Ravioli.
