Just a note that 'laksa' here means the usual version served in Singapore.

We covered local dishes like laksa (spicy noodle soup) and rendang (a kind of meat dish).

As the Wikipedia article [1] notes, there are many variations of laksa served in the region.

You can find the best Ba Kut Teh, Fish Head Curry, Sambal Stringray, Kaya and Laksa in Malaysia and not singapore.

Possibly my favourite lunch in the world can be had at Malaysian Laksa House (formerly Coconut House) on Elizabeth street in Melbourne.

Katong laksa on the other hand (which is in the article) is probably the famous hawker dish that is most uniquely Singapore.

He went to a hawker stall to order laksa for lunch and was surprised to be served by what he called 'curry noodles'.

The laksa in our hometown in Malaysia was a completely different version [2].

Incidentally, the Katong laksa at Cassia in Santa Monica is probably as close to the real deal as you can get outside of Asia.

And I haven't mentioned the great food in Penang, Penang Laksa ranked 7th in the 50 most delicious foods in the world...

Who has the best chicken laksa these days?

One day, after struggling to order laksa at the hawker center because I didn’t know what “dabao” meant, I confided in my new friend, Wei qi.

There's no such thing as a "correct" Laksa recipe for instance, so if you want to understand what it is, you have to investigate how different people make it differently, and how that's changed over time.

A good example of this is 328 Katong Laksa, once Singapore's most famous hawker stall, which has fragmented into at least half a dozen competing variants: one's at the original location, one has the license to the name, some are run by the original dude's family, etc.
