Makes me think of this: My understanding is that chitterlings is the correct spelling and chitlins is the correct pronunciation, but so many people spell it chitlins that it has become an acceptable form of the written word.

Funny he was fine with the Chinese in that case, who are more likely to cook chitlins at some point which can smell strong and bad for a week.

I ate jerk chicken with red beans and rice last week, I don’t think that was an Anglo-Saxon invention, nor was chitlins, collard greens or other dishes.

Obviously it's a bit different here in Australia to the American South, but if I was to offer up some chitlins/tripe to a group of Anglo-Australians, the vast majority of them wouldn't touch it.

I mean, there's chitlins, tripe, scrapple, head cheese, natural sausage casing, beef shin, pig's trotters, aspic jelly, oxtail, black puddings, the list goes on.

Yes yes we get the idea, ya all don't like soul food or fried chicken or McD because of the black people who eat it and we'll get endless rationalization about how black people eating chitlins are evil while old white guys eat pork rinds which are some kind of manna from heaven.

Small intestines (chitterlings or "chitlins" in the US) is a good example - I'm a middle class white person in the northeastern US and I've never had them and no one I know has ever admitted eating them to me, but they're popular among poor people of all races in the rural south and among black Americans in northern cities.
