Author's about page says they don't know the English name for Escalopes de veau à la milanaise.

Rich folk ate in French, and that's why we get terms like pork (porc), beef (boeuf), veal (veau), and mutton (mouton).

I use something called More than Gourmet Glace de Veau Gold.
