To me the Talisker is quite bland, the sherry flavor really drowned out any peatiness.

Bourbon and sherry have traditionally been popular choices, but wine, port, cognac and rum barrels are also being used recently.

That's exactly it, cheers for that - the brewing book I use mentions it's a traditional method but seems to imply for Sherry, but maybe I'm just not remembering correctly.
