We're actually putting a paper together that uses Jitsu so you might find that answers most of your questions (the team is busy with eval at the moment).

What about doing some contact fighting sports like jiu jitsu or muay thai or maybe even boxing?

Judo and Brazilian Jiu Jitsu however have been a lot more successful at keeping its bar high.
