As you say, the depth to replace an entire Micros or Aloha setup would take years of development.

The largest challenge for these newcomers (that many underestimate) is the depth of software in the aloha/Micros pos.

Any breach in the pressure envelope would be a miniature version of Aloha Airlines 243.

Micros and Aloha treated their platform as an ecosystem that they wanted to protect.

Instead of spending thousands on upgrading to the latest Micros and Aloha POS, they are now looking at tablet based and cloud based pos systems.

I co-own a sailboat with two Hawaiian Airlines pilots (both formerly Aloha Airlines pilots).

I work for the company that makes Aloha and I can see the newer products we are offering yet not many restaurants I frequent seem to be using the new versions.

You don't have to use high bandwidth ADCs, in another post Aloha brings up the XTS3000 which uses a ADC/DAC setup that only digitizes about 400KHz of bandwith and it gets along fine as far as power consumption.

I'm surprised not to see Aloha editor [0] in their list of "Existing Solutions".

Part of the problem is customer not wanting to update systems already in place (update to a new version of Aloha).

Some POS systems will let you open a check w/ nothing on it (Aloha) but some won't (Micros).

And on Aloha, if a server logs in and looks at that empty check before you put something on it, it'll automatically close.
