Beer has a similar problem; "small batch artisinal" tends to result in inconsistent product, so the easiest thing to do is to cover up inconsistencies with a lot of malt and hops. It's actually significantly harder to make a nice light pilsner than it is to make a heavyweight IPA. If you want a "craft" product, you should really make it yourself.

Crush your malt too fine or too coarse, mess up the mash temperatures, and you end with things like a too high or low efficiency, a stuck sparge, or too many fermentable and unfermentable sugars. Of course, in a fully automated industrial brewery this usually isn't a problem, but your typical nano or micro-brewery is a still a lot of manual works, and thus many ways to mess up manually.

Just in case anyone is wondering - whisky isn't made from peat, it is made from malted barley that was often dried over a peat fire and this very distinctive aroma was imparted to the malt and then to the spirit. NB When I was as student I used to have a summer job in a maltings that made malt from barley that was used by a number of distilleries. Note that most maltings are actually fairly large industrial plants - not really the normal image people have of the Scots whisky industry although lots of higher end distilleries do make their own malt.
