pecorino

From italian its pecorino pepato (specifc, I know) and then black truffles variants, usually also of pecorino.

Grate some solid Parmesan or Pecorino Romano hard, dry cheese to yield ~1 C of grated cheese.

It's a simple pasta, but it's difficult to get right, since parmesan/pecorino are diffcult to emulsify.

Make pasta, leave some pasta water and add pecorino cheese (shredded), then some pepper.

I once bought some pecorino romano to make cacio-e-pepe and regret doing that, it's an overhyped dish.

Also consider cheeses like Parmigiano Reggiano and Pecorino Romano.

They're the best until you try pecorino romano.

There's no discernable branding beyond that (compared to the Pecorino Romano I buy, which has "Locatelli" plastered all over it).
