I've tried a lot of vector styles (all openmaptiles styles, the base protomaps styles, all mapbox styles) and generators (protomaps, openmaptiles, mapbox).

Note that the demotiles style is not really comparable to a production basemap such as ones based on the popular OpenMapTiles schema.

There is also the MapTiler OMT style for OpenMapTiles, which uses Vector Tiles.

From this I inferred they were referring to Postgres and PostGIS, which are used in the canonical OpenMapTiles implementation.

I think he was referring to a freely available full planet OSM mbtiles dump, to be used with OpenMapTiles.

I've been testing a setup that automatically generates OpenStreetMap/OpenMapTiles formatted pmtiles and mbtiles, then makes them available by torrent.

Are you talking about just the OpenMapTiles spec, or some adjacent software?

It uses the openmaptiles spec for the result files and you can also generate some custom tiles by writing yaml (or forking the java source).

What you need is a bike specific style for OpenMapTiles schema.

It sounds like versatiles uses the shortbread schema (contrast vs OpenMapTiles, protomaps) - a container format: a way to pack multiple tiles into a single file.

In my testing I’ve seen ~10% reduction in overall OpenMapTiles archive size with default settings but there are some more optimizations the team is working on that should bring it down even further.

OpenMapTiles's data are too poor ("compressed": different cycle way types are summarized in a unique tag) to make a great cycle map.
