Not sure about iUI, but jQTouch uses webkit-enhanced markup so any webkit engine will read it correctly.

Unlike Google who has inexorably tied Blink to Chrome, Apple pours most of its efforts into WebKit itself.

My suspicion would be that your G1 doesn't have all the magic webkit extensions that are in safari mobile.

The WebKit dev team really pushes for power efficiency in a much bigger way than the Chrome dev team does.

I think it's important to highlight that these benefits aren't exclusive to Safari; they encompass all of WebKit on OS X.

Not every project is huge like linux and webkit.

It's hard not to personalize things like what Oliver Hunt said in [0], "The issue here isn't "can we make multiple vms live in webkit" it's "can we expose multiple languages to the web", to the former i say obviously as we already do, to the latter I say that we don't want to." The general tone Oliver had was akin to saying only little-endian machines should be supported on the Web.

What real commitment from Apple would give you is bug-fixes and improvements to Webkit.

Alternatively, you could work on the Javascript interpreter in Firefox or Webkit.
